How to Check Makhana Quality Before Buying: A Buyer's Checklist
Buying makhana in bulk? Here are the six checks we use at our Katihar facility: size grade, moisture, colour, popping, broken pieces and packing.
Two lots of makhana can look the same in a photo and still behave very differently in your kitchen, your roasting line or your shipment. Whether you are a wholesaler, a snack brand or an importer, a few simple checks tell you whether a lot is worth ordering. This is the checklist we follow at our processing facility in Katihar, Bihar, where makhana (fox nut or phool makhana) is graded and packed.
1. Check the size grade (Sutta)
Makhana is sold by sutta, which is a size grade. A higher sutta number means a bigger, rounder pop. Common grades are:
- 3 Murra: 9.5 to 12.5 mm
- 4 Sutta: 12.7 to 15.5 mm
- 4 Sutta+: 12.7 to 24 mm
- 4.5 Sutta+: 14.2 to 24 mm
- 5 Sutta: 15.8 to 19 mm
- 5 Sutta+: 15.8 to 24 mm
- 6 Sutta+: 19 to 24 mm
Always ask for the size range in millimetres, not just the grade name, because the same grade name can mean different things from different sellers. You can see our full range on the makhana grades page.
2. Ask for the moisture level
Moisture decides how long makhana stays crisp and how well it pops or roasts. Our makhana is kept at 8 to 11% moisture. Makhana that feels soft or chewy, or that smells slightly musty, has usually picked up too much moisture and will not store well.
3. Look at colour and surface
Good popped makhana is clean white to creamy white. Be careful with lots that look unnaturally bright, because very white makhana can mean it was treated to look better. Dark spots, grey patches or yellow tinge point to poor drying or old stock.
4. Test the crunch and the pop
Take a few pieces and break them. Fresh makhana snaps cleanly with a dry crunch and has a light, airy inside. If it bends or feels leathery, it is not dry enough. If you are buying for roasting, roast a small test batch: well-dried makhana puffs evenly and stays crisp after cooling.
5. Count the broken pieces and dust
Every lot has a small amount of broken pieces, but a large share of crumbs at the bottom of the bag shows rough handling or poor sorting. Ask how the lot was sorted by size and whether broken pieces were removed before packing.
6. Check packing and labelling
Makhana is light and absorbs moisture from air, so packing matters as much as the product. Look for sealed, food-grade packing with a clear label showing the grade, batch details and packing date. For bulk and export orders, ask what packing is used for the shipment route.
Questions to ask any supplier
- What is the exact size range in mm for this grade?
- What is the moisture level of this lot?
- Can I get a sample before a bulk order?
- Which licences does the seller hold? (We hold FSSAI, GST, MSME ZED Silver and IEC.)
- What is the minimum order quantity?
Samples and minimum orders
For domestic buyers our minimum order is 100 kg. Importers can start with an air-freight trial from 8 kg, and export grades run from 4 Sutta+ to 6 Sutta+. See our makhana export page for details, or browse phool makhana products.
Frequently asked questions
Which makhana grade is best?
There is no single best grade. Bigger grades like 5 Sutta+ and 6 Sutta+ are chosen for premium packs and gifting, while 3 Murra and 4 Sutta suit roasting, flavoured snacks and ingredient use.
Does white colour mean better makhana?
Not always. A natural creamy white is normal. Extremely bright white can be a warning sign, so ask the seller how the makhana was processed.
How should makhana be stored?
Keep it in a sealed, airtight pack in a cool, dry place away from sunlight, so it stays crisp.
